Oatmeal Butterscotch Cookies

3 / 4 cup butter, softened
3 / 4 cup sugar
3 / 4 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
1 1 / 4 cup flour
1 teaspoon baking powder
1 / 2 teaspoon salt
1 / 2 teaspoon ground cinnamon
3 cupsquick cooking oats, uncooked
1 package (10 - oz) butterscotch chips
Preheat oven to 375 degrees.
In a large bowl, combine butter, granulated sugar and brown sugar until well blended. The eggs and vanilla, mixing well. Mix the flour, baking powder, salt and cinnamon, gradually beat into butter mixture until well blended add. Stir in oats and butterscotch chips and mix well. Drop by teaspoon on ungreased baking sheets. Bake at 375 degrees for 8 to10 minutes or until golden brown. Cool slightly, remove the pans on the grid. Cool completely.
Apple oatmeal cookies
3 / 4 cup butter-flavored shortening
1 1 / 4 cups packed brown sugar well
1 egg
1 / 4 cup milk
1 1 / 2 teaspoon vanilla
3 cups quick-cooking oats
1 cup flour
1 1 / 4 teaspoon cinnamon
1 / 4 teaspoon nutmeg
1 / 2 teaspoon baking powder
1 / 2 teaspoon salt
1 cup peeled, diced apples
3 / 4 cup raisins, optional
3 / 4 cup walnut piecesoptional
Preheat oven to 375 degrees. Grease baking sheets and set aside.
Cream shortening, brown sugar, egg, milk and vanilla at medium speed of an electric mixer for 1 1/2 minutes. In a small bowl, combine flour, cinnamon, nutmeg, baking soda, and salt. Beat into the creamed mixture with the mixer on low speed until well blended. Stir in the apples, raisins and nuts, if using. Stir in the oats. Drop the mixture by rounded tablespoonfuls on the prepared baking sheets. Bake at 375 degrees for 13 minutes. Cool 2 minutes on the baking sheet. Then remove the cookies to a wire rack to finish cooling. Makes about 2 1/2 dozen cookies.
Yield: Apprx 4 dozen
